Combine the sweet potato, egg, flour, curry paste and coriander in a bowl.
Heat 1 1/2 tbs oil in a frying pan over medium-high heat. Spoon four1/4-cup (60ml) portions of the mixture into the pan. Cook for 3 mins each side or until golden and cooked through. Transfer to a plate, then repeat with the remaining oil and remaining mixture.
Serve fritters with coleslaw, salad dressing, lemon wedges and coriander.
