Taneth’s mango, macadamia and avocado salad


  • 3 bacon rashers, finely chopped
  • 1 tbs Coles Pure Australian Honey
  • 2 tsp Dijon mustard
  • 2 tbs Coles Olive Oil
  • 2 tbs apple cider vinegar
  • 2 baby cos lettuces, leaves separated
  • 1 mango, stoned, peeled, thinly sliced
  • 1 avocado, stoned, peeled, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/3 cup (45g) macadamias, toasted, coarsely chopped

  1. Step 1

    Heat a frying pan over medium-high heat. Add the bacon and cook, stirring, for 4-5 mins or until crisp. Transfer to a plate lined with paper towel.

  2. Step 2

    Place the honey, mustard, oil and vinegar in a screw-top jar. Shake until well combined. Season.

  3. Step 3

    Arrange the lettuce, mango, avocado, onion and macadamia on a serving platter. Sprinkle with bacon. Drizzle with dressing to serve.
