You will need udon noodles, salmon portions, teriyaki stir-fry sauce, superfood vegetable mix and spring onions to make this yummy stir-fry in 25 minutes.
Start by cooking the udon noodles in a large saucepan of boiling water for about 4 minutes or until tender. Drain the noodles well.
To remove the skin from the salmon, place the portions skin-side down on a chopping board, then run a sharp knife along each portion just above the skin. Discard the skin and coarsely chop the salmon. You could also swap the salmon for tofu.
Put the chopped salmon in a large bowl with the infusion paste from the stir-fry sauce packet. Toss to combine.
Heat a wok over high heat. Stir-fry half the salmon for 3 to 4 minutes or until just cooked. Remove from the wok and then stir-fry the remaining salmon. Return the salmon to the wok and add the finishing sauce from the packet along with a pack of Superfood Vegetable Mix.
Stir-fry for 1 minute or until the vegetables are tender. Add the noodles and stir-fry for another minute or until the stir-fry is well combined and heated through.
Divide the stir-fry among serving bowls and sprinkle with spring onions to serve.
