  1. Step 1

Combine the flour, sugar and bicarbonate of soda in a large bowl. Whisk the milk and egg in a jug. Add to the flour mixture and whisk to combine. Set aside for 10 mins to rest. Reserve ½ cup (125ml) of batter. Divide remaining batter into 3 portions and tint pink, blue and green with food colouring.
  2. Step 2

Heat a non-stick frying pan over medium-low heat. Brush with a little butter. Pour ¼ cup (60ml) of pink batter into pan. Cook for 30 secs. Pour two ½-tbs portions of pink batter onto 1 edge of pancake, allowing edges to touch, to make ears. Cook for 1-2 mins or until bubbles appear on surface. Turn. Cook for a further 1-2 mins or until light golden. Transfer to a plate. Repeat with butter and remaining pink, blue and green batter to make 6 teddy bear pancakes.
  3. Step 3

Spoon six 1-tbs portions of the reserved batter around the pan, allowing room for spreading. Cook for 1 min. Turn and cook for a further 1 min or until cooked through. Top each teddy bear pancake with a mini pancake. Decorate with chocolate writing icing.
