Ingredients

  • 2.5kg Coles Australian Lamb Whole Leg Roast
  • 1/4 cup (60ml) extra virgin olive oil
  • 2 garlic cloves, cut into small matchsticks
  • 4 thyme sprigs, cut into small sprigs
  • 2 garlic bulbs, halved crossways
  • 3 thyme sprigs, extra, to serve
  • Mashed potato, to serve
  • Steamed vegetables, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Grease a large baking dish.
  2. Step 2

    Use a small knife to make cuts all over lamb. Rub oil over lamb. Season well. Place a garlic matchstick and a small thyme sprig in each cut. Place the lamb, halved garlic and extra thyme in a baking dish. Roast for 2 hours for medium or until cooked to your liking. Set aside, covered, for 15 mins to rest.
  3. Step 3

    Serve the lamb with mashed potato and steamed vegetables.
