This quick and easy tofu and edamame salad makes for a fresh and light meal, it's the perfect meat-free dish to try out this week.

Tofu and edamame salad


  • 350g pkt Coles Nature’s Kitchen Sweet Chilli Tofu Nuggets
  • 1 cup (150g) frozen edamame or broad beans, thawed, peeled
  • 350g pkt Coles Asian Style Salad Kit
  • Coriander leaves, to serve
  • Lime wedges, to serve

  1. Step 1

    Cook the tofu following packet directions.
  2. Step 2

    Meanwhile, place edamame or broad beans in a small saucepan. Cover with water and bring to the boil over high heat. Cook for 2 mins or until heated through. Drain. Refresh under cold water.
  3. Step 3

    Prepare the salad kit in a large bowl. Add edamame or broad beans and toss to combine.
  4. Step 4

    Divide the salad mixture among serving bowls. Top with tofu and coriander. Serve with lime wedges.
