Ingredients

  • 1 1/2 cups (330g) long-grain white rice
  • 450g Coles Nature’s Kitchen Firm Tofu, crumbled
  • 400g pkt Coles Kitchen Family Stir Fry
  • 100ml Ayam San Choy Bao Sauce or vegetarian oyster sauce
  • 1 iceberg lettuce, leaves separated
  • 1 long red chilli, thinly sliced (optional)

Method

  1. Step 1

    Place the rice and 21/4 cups (560ml) water in a medium saucepan. Bring to the boil over medium heat, then reduce heat to low. Cover and simmer, stirring occasionally, for 15 mins or until liquid is absorbed and the rice is tender. Set aside, covered, for 5 mins to steam.
  2. Step 2

    Meanwhile, heat a lightly greased non-stick frying pan over high heat. Add the tofu and cook, stirring, for 6 mins or until golden brown. Add the vegetables and cook for 1 min or until just tender. Add the sauce and cook, stirring, for 2 mins or until sauce thickens slightly and vegetables are tender.
  3. Step 3

    Divide lettuce leaves among serving plates. Top with rice and tofu mixture. Sprinkle with chilli, if using, to serve.
