Tomato and basil bruschetta pasta

Ingredients

  • 375g Coles Simply Spaghetti
  • ¼ cup (60ml) olive oil
  • 2 x 250g punnets cherry tomatoes, halved
  • 2 garlic cloves, crushed
  • 2 tbs Coles Grated Parmesan
  • ¼ cup basil leaves

Method

  1. Step 1

    Cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain, reserving ½ cup (125ml) cooking liquid.

  2. Step 2

    Heat oil in a large frying pan over high heat. Add tomato and garlic and cook, stirring, for 5 mins or until tomato softens.

  3. Step 3

    Add pasta and reserved cooking liquid with parmesan and toss for 2 mins to combine. Season.

  4. Step 4

    Divide pasta among serving bowls and sprinkle with basil.
