Tomato and green bean beef keema

Ingredients

  • 1 tbs vegetable oil
  • 1 large brown onion, cut into wedges
  • 2 garlic cloves, crushed
  • 500g Coles Australian 4 Star Beef Mince
  • 2 tsp ground cumin
  • 2 tsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground ginger
  • 2 dried bay leaves
  • 400g can crushed tomatoes
  • 300g green beans, trimmed, cut into 3cm lengths
  • 2 tbs coriander leaves
  • 200g Greek-style yoghurt
  • Basmati rice, to serve
  • Lemon wedges, to serve

Method

  1. Step 1

    Heat oil in a large frying pan over medium heat. Add onion and cook, stirring, for 2 mins or until starting to brown. Add garlic. Cook, stirring, for 30 secs or until fragrant. Add mince and cook, stirring with a wooden spoon to break up any lumps, for 5 mins or until cooked through. Add spices and bay leaves and cook for 30 seconds or until fragrant. Add tomato and bring to a simmer. Cook for 5 mins or until thickened slightly.
  2. Step 2

    Add green beans and cook, covered, for 3 mins or until beans are tender. Divide rice and keema among serving plates. Top with yoghurt and coriander. Serve with lemon wedges.
