For a filling and delicious dinner for the family, you can’t go past this tomato and sausage ravioli recipe. It’s quick, easy and yummy to boot.

Tomato and sausage ravioli


  • 500g pkt Coles Finest Australian Beef & Margaret River Shiraz Sausages, casings removed
  • 2 x 200g pkts cherry tomatoes, halved
  • 3 garlic cloves, crushed
  • 2 x 325g pkts beef or vegetable ravioli
  • 3/4 cup basil leaves

  1. Step 1

    Place a frying pan over medium-high heat. Cook the sausage, stirring with a wooden spoon to break into lumps, for 5-6 mins or until browned. Add the tomato and cook, stirring, for 5 mins or until tomato just softens. Stir in garlic.

  2. Step 2

    Meanwhile, cook ravioli in a saucepan of boiling water following packet directions or until al dente. Drain well.

  3. Step 3

    Add the ravioli to sausage mixture and toss to coat. Tear two-thirds of the basil and stir into ravioli mixture. Divide among serving bowls and sprinkle with the remaining basil.

Recipe tip

Swap the cherry tomatoes for canned tomatoes if you have them in the pantry. These don’t need to be halved, so they’ll reduce your prep time, too.
