Ingredients

  • 600g pkt Coles Ham & Cheese Tortellini
  • 3 bacon rashers, sliced
  • 1 tbs olive oil
  • 1 large brown onion, thinly sliced
  • 1 red capsicum, seeded, thinly sliced
  • 2 cups broccoli florets
  • 1/2 cup (150g) whole-egg mayonnaise
  • 2 tbs basil pesto
  • 1 tbs white wine vinegar
  • 1/3 cup (50g) pine nuts, toasted
  • 1/4 cup (20g) finely grated parmesan
  • 2 tbs flat-leaf parsley leaves

Method

  1. Step 1

    Cook the pasta in a large saucepan of boiling water following packet directions. Refresh under cold water. Drain.

  2. Step 2

    Meanwhile, heat a large non-stick frying pan over medium heat. Cook the bacon, stirring, for 5-7 mins or until just crisp. Transfer to a plate and set aside to cool.

  3. Step 3

    Return pan to medium heat and add the oil. Add the onion and capsicum and cook, stirring, for 2-3 mins or until tender. Stir in 1 tbs water. Cover with a lid and reduce heat to low. Cook, stirring occasionally, for 10 mins, adding broccoli for the last 3 mins of cooking. Transfer the broccoli mixture to a large heatproof bowl with the bacon and pasta.

  4. Step 4

    Combine the mayonnaise, pesto and vinegar in a small jug. Season. Add to the pasta mixture and gently stir to combine. Transfer to a serving platter. Sprinkle with pine nuts, parmesan and parsley to serve.
