Ingredients

  • 1.3kg Coles Australian No Added Hormones Beef Roast Topside
  • 1kg baby white potatoes, halved or quartered
  • 450g gold sweet potato, peeled, coarsely chopped
  • 1/3 cup (80ml) extra virgin olive oil
  • 200g green beans, trimmed
  • 1 tbs chopped basil
  • 1 tbs chopped flat-leaf parsley
  • 1 garlic clove, crushed

Method

  1. Step 1

    Preheat oven to 250°C. Line a large roasting pan with baking paper. Arrange beef, potato and sweet potato in lined pan. Drizzle with half the oil, turning vegetables to coat. Season. Reduce oven to 200°C. Roast, turning the vegetables once, for 1 hour (or until the internal temperature of the beef is 60-65°C) for medium or until beef is cooked to your liking. Cover with foil. Rest for 10 mins.
  2. Step 2

    Meanwhile, place beans in a heatproof bowl and cover with boiling water. Set aside for 2 mins or until just tender. Drain well. Combine the basil, parsley, garlic and remaining oil in a small bowl.
  3. Step 3

    Drizzle beef with the basil mixture. Serve with the beans and vegetables.
