Tray-baked chilli, lime and soy chicken drumsticks

Hit refresh on dinner with these easy tray-baked chicken drumsticks They’re flavourful, filling and made in the one pan so you’ll have minimal washing up to do. Give it a go!

  • ¼ cup (60ml) soy sauce
  • 1 red chilli, finely chopped
  • 1 lime, zested, 1 tbsp juice reserved
  • 2 tbsp honey
  • 8 Coles RSPCA Approved Chicken Drumsticks
  • 1 lime, extra, sliced
  • 1 bunch buk choy, trimmed, halved
  • 1 bunch baby broccoli, trimmed
  • Sliced red chilli, extra, to serve
  • Toasted sesame seeds, to serve
  • Steamed jasmine rice, to serve

  1. Step 1

    Preheat oven to 200°C. Combine soy sauce, chilli, lime zest, lime juice and honey in a small jug.
  2. Step 2

    Place drumsticks in a baking dish. Pour over soy sauce mixture. Toss to coat. Season drumsticks with pepper and top with lime slices. Bake in the oven, turning chicken occasionally, for 40 mins or until chicken is cooked through.
  3. Step 3

    Cook buk choy and baby broccoli in a saucepan of boiling water for 2-3 mins or until tender crisp. Refresh under cold water. Drain. Add to the chicken mixture and toss to coat.
  4. Step 4

    Sprinkle chicken with sliced chilli and sesame seeds. Serve with rice.
