Grease a 6-cup (1.5L) loaf pan and line with plastic wrap or lightly grease a silicone bundt pan. Use an electric mixer to whisk the cream and condensed milk in a large bowl until firm peaks form. Gently fold in the fruit salad, chopped mango and grapes or cherries. Spoon into the prepared pan and smooth the surface. Cover with plastic wrap and place in the freezer for at least 6 hours or overnight to set.
Turn onto a serving platter. Decorate with coconut flakes and sliced mango. Cut into slices to serve.
