2 cups (500ml) Pineapple juice
1 cup (250ml) White coconut rum
1 cup Crushed ice
1/4 cup Mint leaves
1/3 cup (80ml) Passionfruit pulp
1 1/2 cups (375ml) Chilled ginger beer
Lime slices, to serve
Passionfruit wedges, to serve
Mint sprigs, to serve

Place the pineapple juice, rum, ice and mint leaves in a blender. Blend until almost smooth. Pour into a serving jug.

Stir in the passionfruit pulp. Top with ginger beer and stir to combine.
