Tropical passionfruit rum spritz


  • 2 cups (500ml) Pineapple juice
  • 1 cup (250ml) White coconut rum or spiced rum
  • 1 cup Crushed ice
  • ¼ cup Mint leaves
  • ⅓ cup (80ml) Passionfruit pulp
  • 1½ cups (375ml) Chilled ginger beer
  • Lime slices, to serve
  • Passionfruit wedges, to serve
  • Mint sprigs, to serve

  1. Step 1

    Place the pineapple juice, rum, ice and mint leaves in a blender. Blend until almost smooth. Pour into a serving jug.
  2. Step 2

    Stir in the passionfruit pulp. Top with ginger beer and stir to combine.
  3. Step 3

    Arrange lime slices around the side of each serving glass. Pour the spritz into the glasses. Top with passionfruit wedges and mint sprigs.
