Tuna mornay twist


  • 2 medium red capsicums
  • 425g can tuna in spring water, drained
  • 2 spring onions, thinly sliced
  • 1 zucchini, coarsely grated
  • 2/3 cup (70g) pizza cheese
  • Spring onion curls, to serve
  • Salad leaves, to serve

  1. Step 1

    Preheat oven to 180°C and line a large baking tray with baking paper. Cut capsicums in half and remove the seeds and membrane. Place on the lined tray and bake for 10 mins.
  2. Step 2

    Combine the tuna, spring onion, zucchini and half the cheese in a large bowl. Spoon into the capsicum halves and sprinkle with remaining cheese. Bake for 15 mins or until heated through and the cheese melts. Season and top with spring onion curls. Serve with salad leaves.

Boost it: Add some extra veg to this dish by stirring canned corn kernels or thawed frozen peas into the tuna mixture.
