Tuna pizza

Ingredients

  • 7g sachet dry yeast
  • 1 tsp caster sugar
  • ½ tsp salt
  • 2 cups (300g) plain flour
  • 2 tbs olive oil
  • ½ x 190g jar Coles Sundried Tomato Pesto
  • 2 x 95g Coles Tuna Onion and Savoury Sauce
  • 1 cup (100g) coarsely grated mozzarella
  • 60g pkt Coles Australian Baby Rocket

Method

  1. Step 1

    Combine yeast, sugar, salt and ¾ cup (185ml) warm water in a jug. Whisk with a fork to dissolve. Cover with plastic wrap. Set aside in a warm place for 5 mins or until bubbles appear on the surface.

  2. Step 2

    Sift flour into a bowl. Add the yeast mixture and oil. Stir until a soft dough forms. Turn onto a lightly floured surface. Knead for 10 mins or until elastic. Place in a lightly greased bowl. Cover and set aside in a warm, draught-free place for 25-30 mins or until the dough doubles in size.

  3. Step 3

    Preheat oven to 220ºC. Use your fist to punch down the dough. Knead on a lightly floured surface until smooth. Divide into 2 even portions. Roll out each portion on a lightly floured surface until 28cm rounds. Place the pizza bases on 2 greased baking trays. Spread with the pesto and top with the tuna and cheese.

  4. Step 4

    Bake for 12-15 mins or until the pizza bases are golden brown and the cheese melts. Top with rocket to serve.
