Turkey and pumpkin sandwich


  • 120g butternut pumpkin, peeled, seeded, coarsely chopped
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • 4 slices Coles Bakery High Fibre Low GI White Bread
  • 6 slices cooked turkey breast
  • 60g pkt Coles Australian Baby Spinach
  • ⅓ cup (110g) tomato relish or sweet mustard pickles

  1. Step 1

    Preheat oven to 180˚C. Line a baking tray with baking paper. Place the pumpkin on the lined tray and spray with olive oil spray. Sprinkle with cumin and coriander. Toss to coat. Bake for 25 mins or until tender. Transfer to a bowl. Use a potato masher or fork to mash pumpkin until almost smooth. Set aside to cool.
  2. Step 2

    Spread the pumpkin mixture evenly over 2 slices of bread. Top with turkey, spinach and relish or pickles. Top with remaining bread. Cut in half and serve.
