Turkey, cranberry and camambert bruschetta

Ingredients

  • 1 rustic olive batard or any sourdough, sliced
  • 1 tbs Coles Pure Olive Oil
  • 1/4 cup whole-egg mayonnaise or aoli
  • 1 baby cos lettuce, or other lettuce, leaves separated
  • 8 thick slices cooked turkey or chicken
  • 100g Coles Camembert Cheese or other soft cheese, sliced
  • 2 tbs cranberry sauce or chutney

Method

  1. Step 1

    Preheat a chargrill on high. Brush both sides of batard or sourdough slices with oil. Cook bread for 2 mins each side, or until lightly toasted.

  2. Step 2

    Spread some mayonnaise or aioli on each slice then top with a lettuce leaf, two slices of cooked turney or chicken, a slice of camembert or other soft cheese, and one teaspoon of cranberry sauce or chutney to serve.
