Turkey kofta with chargrilled vegetable couscous

Ingredients

  • 1/2 x 400g Birds Eye Deli Grilled Veggies
  • 500g turkey mince
  • 2 tsp all-purpose seasoning
  • 1 cup (200g) Coles Couscous
  • 1 cup (250ml) boiling water
  • 1 lemon

Method

  1. Step 1

    Preheat oven to 200°C. Line a baking tray with baking paper.

  2. Step 2

    Arrange vegetables over the lined tray. Bake for 15-20 mins or until golden and heated through.

  3. Step 3

    Meanwhile, combine the mince and seasoning in a medium bowl. Roll heaped tablespoons of mince mixture into oval shapes. (You should get 16 kofta).

  4. Step 4

    Heat a large non-stick fry pan over medium heat. Cook kofta, turning occasionally, for 8 mins or until browned all over and cooked through. Remove from heat and cover with foil. Set aside to rest.

  5. Step 5

    Meanwhile, place couscous in a heatproof bowl. Pour over boiling water. Cover and set aside for 5 mins to soak. Use a fork to fluff and separate the grains. Add the vegetables and toss to combine.

  6. Step 6

    Serve couscous with kofta and squeeze over the juice of half the lemon and serve with remaining lemon wedges.
