Tips for the best vanilla cake in a mug

Here are some tips to make this easy vanilla mug cake recipe:

  • Measure the right amount of baking powder to add so that the cake rises and stays risen. Don’t replace the baking powder in this recipe with baking soda, they are different!

  • Place the mug on a small plate and fill the mug to a maximum of ⅔ full with batter. This helps ensure the batter doesn’t make a mess in your microwave.

  • Insert a skewer into the middle of the cake to check that it has cooked, making sure it comes out clean before serving.

  • Eat the cake soon after it is cooked, since mug cakes without eggs can harden when cold.

Variations for your vanilla mug cake

This easy vanilla mug cake can be eaten as is, or can act as a base for building other variations of cakes. Make a birthday cake flavoured mug cake by adding in some rainbow sprinkles, or make it chocolatey and rich with a swirl of Nutella or handful of choc chips. For a lighter cake, slice the cake into two and make a mini strawberry shortcake, sandwiching some whipped cream and sliced strawberries between the two cake rounds. To add some tartness, add in diced strawberries, blueberries or raisins into the batter before cooking it in the microwave.
