Here's a rich and savoury vegan gravy that's perfect with mash, baked vegetables or a plant-based roast.

Vegan gravy

Ingredients

  • 1 brown onion, sliced
  • 1 carrot, chopped
  • 1 celery stick, chopped
  • 100g cup mushrooms, sliced
  • 1 garlic clove, crushed
  • 3 thyme sprigs
  • 2 tbs plain flour
  • 2 cups (500ml) vegetable stock
  • 1 tbs Vegemite

Method

  1. Step 1

    Heat 1 tbs olive oil in a medium saucepan over medium-high heat. Add the onion, carrot and celery and cook, stirring, for 5 mins or until soft. Add mushroom, garlic and thyme. Cook, stirring for 5 mins or until mushroom is tender. Add the flour and cook, stirring, for 2 mins or until combined. Gradually add the vegetable stock and Vegemite. Cook, stirring, for 2 mins or until combined. Bring to the boil, then reduce to a simmer. Cook for 5 mins or until gravy thickens.

  2. Step 2

    Strain into a jug, discarding solids.

    Serve with... baked veggies and steamed green beans.
