Vegetarian chickpea stir-fry

Ingredients

  • 1½ cups (300g) Coles Jasmine Rice
  • 1 tbs sesame oil
  • 2 x 420g cans Coles Chick Peas, rinsed, drained
  • 500g Coles Frozen Stir-fry vegetables
  • 2 garlic cloves, crushed
  • 2 tbs soy sauce

Method

  1. Step 1

    Cook rice following packet directions.

  2. Step 2

    Meanwhile, heat oil in a wok or large frying pan over high heat. Add chickpeas and vegetables and stir-fry for 5 mins or until vegetables are heated through.

  3. Step 3

    Add soy sauce and stir-fry for 1 min or until well combined. Serve stir-fry with rice.
