Victoria’s caramelised tomato with burrata

Ingredients

  • 10g butter
  • 2 tbs extra virgin olive oil
  • 1 1/2 tbs balsamic vinegar
  • 4 vine-ripened tomatoes, cut into 1cm-thick slices
  • 1/2 red onion, thinly sliced
  • 1/2 cup basil leaves
  • 150g burrata, coarsely torn

Method

  1. Step 1

    Heat the butter and half the oil in a large frying pan over medium-high heat. Add the vinegar and stir to combine. Cook tomato, in 2 batches, for 2 mins each side or until just tender and slightly caramelised. Transfer to a large serving platter.

  2. Step 2

    Sprinkle onion and basil over the tomato. Top with burrata or mozzarella and drizzle with remaining oil. Season.
