This quick and easy Vietnamese noodle salad recipe gives you a new way to serve up smoked salmon.

Vietnamese-style smoked salmon and noodle salad


  • 200g dried flat rice noodles
  • 350g pkt Coles Kitchen Superfood Slaw Mix
  • 1/2 cup (125ml) Vietnamese-style tangy dressing
  • 2 x 100g pkts Ocean Blue Sliced Smoked Salmon, coarsely torn
  • 1/2 cup (70g) salted roasted peanuts, chopped

  1. Step 1

    Cook the noodles following packet directions or until just tender. Refresh under cold water. Drain well.

  2. Step 2

    Place the slaw mix in a large bowl. Add the noodles, 1/3 cup dressing, half the salmon and half the peanut. Toss gently to combine.

  3. Step 3

    Arrange the salad in a large serving bowl. Top with remaining salmon and sprinkle with remaining peanuts. Drizzle with remaining dressing to serve.
