Warm lamb souvlaki and pasta salad

Ingredients

  • 300g penne pasta
  • 2 tbsp extra virgin olive oil
  • 500g pkt Coles Grill Lamb Souvlaki Strips
  • 200g Perino tomatoes, halved
  • 1/3 cup (55g) pitted kalamata olives
  • 1 red onion, thinly sliced
  • 120g pkt Coles Brand Australian Baby Spinach
  • 2 tbs lemon juice
  • 80g fetta, crumbled

Method

  1. Step 1

    Cook pasta in a large saucepan of boiling salted water until al dente. Drain.
  2. Step 2

    Meanwhile, heat 1 tbsp of the oil in a large frying pan over medium-high heat. Add lamb. Cook, stirring occasionally, for 5 mins or until lamb is just cooked through.
  3. Step 3

    Place pasta, lamb, tomato, olives, onion, spinach, lemon juice and remaining oil in a large bowl. Season. Toss to combine. Serve salad sprinkled with fetta.
