Prepared in just 15 minutes, the slightly smoky flavour of bacon pairs perfectly with the fresh flavours of zucchini, carrots and red capsicum.  This savoury slice can be eaten hot or cold, on its own, served with a leafy salad for a complete meal, or alongside carrot sticks, crackers, dips and fruit at your next picnic.

Essential ingredients to make this bacon and zucchini slice

Zucchini slice is an affordable dish to whip up using pantry staples you may already have. Made from a base of eggs, milk and flour, it's great for making the most of the last few eggs in the carton and the last drop of milk in the fridge. The beauty of a zucchini slice is just how versatile it can be. Our version includes bacon, zucchini, carrots, capsicum, spring onions and cheese, but you can add whatever ingredients you have on hand. By grating the ingredients, it’s a good way to pack veggies in and can be a sneaky method to hide greens from picky eaters.

Tips and tricks for a zucchini and bacon slice

Once you discover how simple it is to prepare the best zucchini and bacon slice, you’ll be making it on repeat. Simply toss all the veggies, bacon, cheese and flour in a bowl before adding the milk, oil and eggs. From here spoon the mixture into a pan and bake. We’ve enhanced the flavour of a basic zucchini slice by adding carrots, spring onions and tasty cheese. The ideal texture for a zucchini slice is moist to the touch with some firmness. Anything too soft and it needs longer in the oven and anything too solid and burnt on top means it is over cooked. While our bacon and zucchini slice recipe takes 40 minutes in the oven, keep an eye on the slice – if it looks like it’s browning too quickly before it has fully cooked, place foil over the top.
