Curtis Stone's BBQ capsicum tips

BBQ your capsicum for maximum flavour.

1. Cook on a BBQ

To avoid sticking, brush a whole capsicum with oil and cook on BBQ for 15 mins, turning as needed, until charred all over.

2. Cover with plastic wrap

Place in a dish and cover with plastic wrap for 5 mins. This softens the skin to make it easy to peel off.

3. Slice the capsicum

Remove the stem, seeds and skin, and slice the flesh as required for your recipe.
