Follow Curtis’ tips for preparing, cooking and slicing steak.

1. Pick a cut

Choose a good-quality cut and bring it to room temperature before grilling.

2. Seaon the steak

Season the outside of the steak generously, as you can’t season the inside.

3. Try a rub or marinade

I love experimenting with different rubs and marinades to add amazing flavour to steak.

4. Get the BBQ very hot

Make sure the BBQ is really hot before adding the steak. This will caramelise the outside and subtly increase the sweetness of the meat.
