For perfectly fluffy Yorkshire pudding, it’s important to let the batter rest for at least 30 minutes before cooking. This helps the pudding rise, resulting in a light and airy texture. Transfer the batter to a jug, then cover and rest. If you want to make the batter the day before, place in the fridge overnight and give the batter a good stir before pouring.
For a crisp golden base and top, Yorkshire pudding needs to be cooked at high heat. For best results – as well as preheating the oven – preheat the pan you’re using. Add ghee or vegetable oil to the pan, then place in the oven for 20 minutes or until the ghee or oil is hot. Once it’s hot enough, add the batter.
