Ways to use up tortillas

In need of some ideas on how to use up tortillas after Mexican night? Here are some creative ways to make sure none go to waste.

1. Homemade tortilla chips 

Make moreish chips for dips, such as salsa and guacamole, or use as a base for meals like nachos. To do it, cut leftover tortillas into triangles and place in a single layer on a lined baking tray. Bake at 180°C, turning halfway, for 12-15 mins or until golden brown. (Alternatively, cook in an air fryer at 180°C for 8-10 mins.)

2. Chicken tortilla bake 

Only used a couple of tortillas in a large pack? Layer up the rest of the tortillas to make a Mexican-style bake – use the recipe at as a guide.

3. Quick tortilla pizzas 

For an easy lunch or dinner, place 2 large tortillas on a lined baking tray. Spread with 1/3 cup (95g) tomato paste and sprinkle with 2/3 cup (70g) shredded pizza cheese. Bake at 220°C for 10-12 mins or until the tortillas are golden and cheese melts. Top with baby rocket leaves and drizzle with pesto to serve.

4. Tortilla bowls

5. Tortilla banana ‘sushi’ 

Try this for breakfast or an after-school snack for the kids. Spread 1 large tortilla with peanut butter or nut-free spread. Place 1 peeled banana on 1 end of tortilla and roll up tightly. Slice into rounds.
