1. Tomato and watermelon gazpacho shots

Bursting with flavour, this refreshing appetiser is perfect for the warmer months. For the best flavour, buy your tomatoes a few days ahead and allow them to ripen at room temperature. 

2. Roasted capsicum salad 

This roasted capsicum salad is filled with goodness and guaranteed to please. If you can't get baby capsicums, use 2 large yellow capsicums instead.

3. Brown rice salad with quinoa, corn and fetta

Filled with grains, veggies and topped with fetta and pomegranate, this brown rice salad is a flavourful side. To remove the seeds from pomegranate, cut in half. Then, gently tap the back of each half with a wooden spoon over a bowel to catch the seeds.

4. Lentil-stuffed eggplants

These stuffed eggplants are filled with spiced lentils and roasted to perfection. To save time this festive season, fill the eggplant shells up to 1 day ahead. Cover and store in the fridge overnight, ready to bake on the day.

5. Vegan spinach filo scroll

This vegan spinach filo scroll makes a crispy, golden and delicious main. To keep the spiral intact, make sure you don't fill the rolls to the ends.

6. Lime and coconut creme caramel

We’ve put a tropical twist on the classic creme caramel. This dessert needs to chill overnight, but you can make it up to 3 days ahead to make Christmas day a little easier.
