Salmon salad with greens and tomatoes

Ingredients

  • 350g Coles Kitchen Green Goddess Salad Kit
  • 310g jar Always Fresh Roasted Pepper Strips (capsicum) , drained
  • 200g Perino tomatoes, halved
  • 420g can Coles Chick Peas, rinsed, drained
  • 415g can Coles Premium Wild Caught Pink Salmon, drained, flaked

Method

  1. Step 1

    Heat a small frying pan over medium heat. Add the almonds from the salad kit and cook, stirring, for 1-2 mins or until golden. Transfer to a plate and set aside to cool.
  2. Step 2

    Arrange the salad mix from the salad kit on a serving platter with the pepper strips, tomato, chickpeas and salmon.
  3. Step 3

    Sprinkle the salad with the toasted almonds. Drizzle with dressing from the salad kit and season with pepper to serve.
