Ingredients

  • 4 Coles Tasmanian Salmon Portions Skin Off
  • 1/4 cup (60ml) Coles Asia Teriyaki Sauce
  • 180g soba noodles
  • 1 cup (150g) frozen edamame, thawed, peeled
  • 250g pkt Coles Kitchen Australian Zucchini Noodles

Method

  1. Step 1

    Place salmon and 2 tbs teriyaki sauce in a bowl. Turn to coat. Spray a large non-stick frying pan with olive oil spray and place over medium heat. Cook the salmon for 3-4 mins each side or until just cooked through.
  2. Step 2

    Meanwhile, cook the noodles in a saucepan of boiling water following packet directions, adding edamame for the last 1 min of cooking. Drain well. Return to the pan with zucchini noodles.
  3. Step 3

    Add the remaining teriyaki sauce and 1 tbs water to the noodle mixture. Toss to combine. Divide the salmon and noodle mixture among serving plates.
