Hearty vegetable and lentil soup
For a wholesome veggie-packed main, try this 5-ingredient soup. It takes only 20 minutes from start to finish.
- 1 brown onion, finely chopped
- 3 cups (420g) frozen mixed vegetables
- 400g can lentils, rinsed, drained
- 400g can diced tomatoes
- 2 cups (500ml) salt-reduced vegetable stock
Heat a large non-stick saucepan over medium heat. Add the onion and 1 tbs water and cook, stirring, for 3 mins or until the onion softens.
Add the vegetables, lentils, tomato, stock and 4 cups (1L) water to the pan. Bring to the boil. Reduce heat to low and bring to a simmer. Cook for 10 mins or until vegetables are tender and the mixture is heated through.
