Eight apple and oat muffins

Ingredients

  • 2 1/2 cups (225g) wholemeal self-raising flour
  • 1/2 cup (45g) rolled oats
  • 1 1/2 tsp ground cinnamon
  • 1/3 cup (75g) brown sugar
  • 1 Royal Gala apple, cored, finely chopped
  • 1 Coles Australian Free Range Egg
  • 1 1/2 cups (375ml) buttermilk
  • 1/2 cup (125ml) vegetable oil
  • 1/2 Royal Gala apple, extra, thinly sliced
  • 1 tbs rolled oats, extra
  • Spreadable cream cheese, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Grease 12 holes of a 1/3-cup (80ml) muffin pan. Place the flour, oats, cinnamon, sugar and apple in a large bowl and stir to combine. Make a well in the centre.
  2. Step 2

    Whisk the eggs, buttermilk and oil in a large jug. Add to the apple mixture in the bowl and stir until just combined (don’t overmix). Divide the mixture evenly among the prepared holes. Top with the extra apple and oats.
  3. Step 3

    Bake for 20-25 mins or until a skewer inserted in the centres comes out clean. Transfer to a wire rack to cool slightly. Serve warm or at room temperature with cream cheese.
