Mandarin tarte tatin

Ingredients

  • 3/4 cup (165g) caster sugar
  • 1/2 tsp vanilla extract
  • 5 seedless mandarins, peeled, segmented
  • 2 sheets frozen puff pastry, just thawed
  • Vanilla ice-cream, to serve

Method

  1. Step 1

    Preheat oven to 200°C. Place sugar, vanilla and ¼ cup (60ml) water in a 20cm (base measurement) ovenproof frying pan. Stir over low heat for 3-5 mins or until sugar has dissolved.
  2. Step 2

    Increase heat to medium and simmer for 5-7 mins or until the caramel is golden. Remove from the heat and arrange mandarin segments over the caramel. Press the pieces of pastry together and using a 23cm diameter plate as a guide, cut a circle from the pastry. Prick the pastry with a fork. Place the pastry over the mandarin and tuck the edges under. Cook for 30-35 mins or until the pastry is puffed and golden.
  3. Step 3

    Set aside for 5 mins to cool before carefully turning onto a serving plate. Cut into slices and serve topped with a scoop of ice-cream.
