Quick sausage and apple hash

Ingredients

  • 3 Coles Australian Carisma Washed Potatoes, finely chopped
  • 500g pkt Coles Finest Pork, Sage & Black Pepper Sausages
  • 1 brown onion (150g), finely chopped
  • 1 Granny Smith apple, peeled, finely chopped
  • 500g pkt Coles Kitchen Extra Creamy Coleslaw Salad Kit

Method

  1. Step 1

    Place the potato in a microwave-safe bowl with a little water. Cover and cook in the microwave on medium-high for 5 mins or until just tender.

  2. Step 2

    Meanwhile, heat a large greased frying pan over medium heat. Cook the sausages, turning, for 8-10 mins or until browned. Transfer to a plate and set aside to cool slightly. Thickly slice.

  3. Step 3

    Increase pan to medium-high heat. Add the potato and cook, tossing, for 5-6 mins or until starting to brown. Add the onion and apple. Cook, tossing, for 5 mins or until tender. Season. Stir in the sausage and coleslaw mix, reserving dressing. Cover and cook, stirring occasionally, for 2-3 mins or until mixture is heated through. Drizzle the hash with reserved dressing to serve.
