Heat half the oil in a large deep frying pan over medium-high heat. Add the chicken and break up using a wooden spoon. Cook for 3-4 mins or until golden brown. Add half the soy sauce and cook, stirring, for 2-3 mins until chicken starts to caramelise. Transfer to a plate.
