Combine the quinoa and 2 cups (500ml) water in a large saucepan over high heat. Bring to the boil. Reduce heat to low. Cook, covered, for 15 mins or until quinoa is tender and water is almost absorbed. Add the orange juice and cook, stirring, for 5 mins or until quinoa boils and thickens. Set aside, covered, for 5 mins to cool slightly.
Meanwhile, heat a chargrill pan over high heat. Cook the orange slices for 1-2 mins each side or until charred.
Stir the yoghurt and half the maple syrup into the quinoa mixture. Divide among serving bowls. Top with the grilled orange, strawberries and blueberries. Drizzle with the remaining maple syrup and sprinkle with pistachios.
