  • 2 x KB’s Deli Thawed MSC WA Cooked Rock Lobster
  • 1/3 cup (100g) mayonnaise
  • 1/4 cup chopped chives
  • 2 tsp lemon juice
  • 1 tsp lemon pepper (optional)
  • 1/2 cup (60g) finely chopped celery
  • 10 brioche slider buns, split, lightly toasted
  • 1 Lebanese cucumber, thinly sliced
  • 40g baby rocket leaves
  • Finely chopped chives, extra, to serve
  • Lemon wedges, to serve

Method

  1. Step 1

    Twist head off lobsters to remove. Use kitchen scissors or a large, sharp knife to cut the tails in half. Remove the meat and coarsely chop.

  2. Step 2

    Combine mayonnaise, chives, lemon juice and lemon pepper in a medium bowl. Add the celery and stir to combine. Season.

  3. Step 3

    Layer mayonnaise mixture, sliced lobster, cucumber and rocket on bun bases. Sprinkle with extra chives. Top with bun tops. Serve with lemon wedges.
