Ingredients

  • Coles Chinese Beef Stir-Fry Recipe Base
  • 2 tbs vegetable oil
  • 500g Coles beef mince
  • 1/2 onion, thinly sliced
  • 1 carrot, grated
  • 1 zucchini, grated
  • 1/4 small cabbage, thinly sliced
  • 2-3 tablespoons plum sauce
  • 1 tsp chicken stock powder or 1 chicken stock cube
  • 2 single serve pantry fresh Hokkien Noodles

Method

  1. Heat the oil in a wok then brown the mince. Add the onion, cook for 2 minutes

  2. Add remaining ingredients and stir for 5 minutes until vegetables are cooked.

  3. While vegetables are cooking, soak noodles in boiling water for 2-3 minutes and loosen. Drain

  4. Mix in noodles and heat through. Season with pepper

Serving Suggestions

This is a very versatile dish. You could spoon the mince mixture (without the noodles) into lettuce cups for a Sang Choy Bow.
To make it more authentic you could substitute the vegetables with bean sprouts and Asian greens.
Sprinkle over some chopped cashews for added crunch!
It can even be used with chicken.

Handy Tips

Boil the kettle while you are browning the mince then it is ready to go for the noodles.

Mum’s Comments

It covers all the bases. It is very fast, cheap, and tasty for the whole family and is very easy to prepare. It is also very versatile so even though you are cooking the same thing you can alter it slightly and serve up something completely different. I had to think, "When do I use recipe bases?" And the answer was when I have meat in the fridge but I am not feeling very inspired or when I haven't been shopping and only have a few vegies in the fridge. The vegetables I used are ones that generally last a long time in the fridge so this is an excellent dish to use up all those old vegies and the plum sauce and chicken stock are often staple pantry items.

My family loved it. I have 3 kids under 5 including a VERY fussy 2 year old. She will not eat vegies and is very picky with what she eats. By adding the noodle in she would taste it and once she tasted the slight sweetness of the sauce she loved it. (That’s not to say the next time I serve it up she wont screw her nose up at it!! The nature of a 2 year old!!) My husband liked it too and thought it might be something he can make when I am working late because it was so quick to make. By grating the vegies up the kids didn't even know they were there!!
