Spiced chicken and plum tray bake

Mix up your usual chicken bake with this spiced chicken and plum tray bake recipe. It perfectly balances sweet and savoury flavours.





  • 1kg Coles RSPCA Approved Australian Chicken Drumsticks
  • 2 tsp Chinese five spice
  • 8 plums, stoned, halved
  • 1 bunch baby broccoli, halved
  • 2 x 250g pkts Coles Coconut Chilli Lime Microwave Rice



Preheat oven to 200°C. Use a large sharp knife to score the thickest part of the chicken drumsticks 2-3 times. Spray chicken with olive oil spray. Place chicken in a bowl with the five spice and toss to combine. Heat a flameproof roasting pan over medium heat. Add the chicken and cook, turning, for 2 mins or until golden brown. Transfer the pan to the oven and bake for 10 mins.


Add the plum to the chicken in the pan and spray with olive oil spray. Bake for a further 10 mins. Add baby broccoli and bake for 5 mins or until the chicken is cooked through and baby broccoli is just tender. Season.


Heat the rice following packet directions. Serve the chicken mixture with the rice.
