A guide to pork cuts

Here's a guide to some of our favourite pork cuts available at Coles, and the tastiest ways to cook them.

Find out what cut works for different techniques and types of recipes, then roll up your sleeves to make some of our tasties pork dinners.

Raw pork sizzle steaks

Sizzle steaks

BEST FOR: grilling, pan-frying

COOK TIME: 2 minutes

TOP TIP: At 1-1.5cm thick, these steaks are ideal for when you need a fast meal. Rest for 5 minutes after cooking to allow the juices to redistribute so it's juicy not dry.

Raw pork ribs

Spare ribs

BEST FOR: roasting, BBQ-ing, slow-cooking

COOK TIME: 2 1/2 hours in the oven

TOP TIP: This meaty cut is tougher than others so needs to be cooked slowly to make it tender.  Choose it for times when you're not in a rush to cook.

Raw pork loin chops

Loin chops

BEST FOR: pan-frying, grilling

COOK TIME: 6-8 minutes or until just cooked through

TOP TIP: This lean cut has the bone in, which gives lots of flavour. It doesn't take long to cook - for the juiciest results, cook until its blushing pink, not white.

Raw pork boneless shoulder

Boneless shoulder

BEST FOR: roasting, slow-cooking for pulled pork

COOK TIME: 35 minutes per 500g

TOP TIP: This cut makes a quick roast. For crisp crackling, dry out the rind in the fridge overnight, then rub with salt before cooking.

Raw pork mince

Mince

BEST FOR: stir-frying or making patties

COOK TIME: 5 minutes

TOP TIP: You can use lean and regular mince interchangeably, but the higher fat mince is juicier, so its better for burgers, while lean mince is good for bolognaise as you add plenty of liquid.
