Thai Beef with Basil Stir-Fry

Ingredients

  • 500g Cook with Curtis Thai Recipe Beef Mince
  • 1 tbs vegetable oil
  • 1 small red capsicum, seeded, thinly sliced
  • 200g sugar snap peas
  • 1 shallot, thinly sliced
  • 2 tbs fish sauce
  • ½ tsp cornflour
  • 1½ cups basil leaves

Method

  1. Heat a large non-stick frying pan over high heat. Add the beef and stir-fry, breaking up into 2cm pieces, for 4 mins or until cooked through. Transfer to a plate.
  2. Return the pan to high heat. Add the oil, capsicum, sugar snap peas and shallot. Stir-fry for 2 mins or until the vegetables are just tender.
  3. Stir in the fish sauce, cornflour and ½ cup (125ml) water. Cook for 30 secs or until simmering. Remove from heat and stir in the beef and basil.

Serve with steamed jasmine rice and lime wedges
